Sausages in Sauce with Beans
This is definitely not a light dish, but rather a hearty meal suitable for those winter days when its freezing outside, and we dont feel like doing much. All we want is a good and warm meal that will pleasantly warm up our chilled bodies.

Ingredients

1.5 spoons Oil, vegetable oil, canola

500 g Carniolan sausage

1 piece Onion, raw

1 piece Green, raw

1 piece Bell pepper, red, fresh

1 piece Carrot, fresh

3 pods Garlic, fresh

1.5 teaspoons Spices, paprika

1 teaspoon Spices, thyme, dried

125 ml Alcohol, Wine, White

500 ml Tomato sauce, without salt

400 g Beans, grains, cooked

Peel the onion and garlic, then finely chop them separately. Wash the vegetables thoroughly, clean them, and cut them into small pieces.

In a large pot with a thick bottom, heat the oil and quickly sear the sausages on all sides. Remove the seared sausages from the pot and set them aside on a plate. Add the onion to the pot and caramelize it, stirring occasionally. Then add the vegetables and sauté them with the onion for another 5 minutes.

Add the garlic, spices, and thyme to the pot. Stir and sauté for another 1 to 2 minutes, then return the seared sausages to the pot. Pour in the wine and use a wooden spoon to scrape the bottom of the pot to release all the caramelized bits that formed during sautéing. Add the canned tomatoes, mix well, and bring to a boil. Reduce the heat and let the dish simmer gently for 40 minutes. Season with pepper and salt to taste, and add a bit of water or broth if needed.

Drain the beans, rinse them under running water, and drain well. Add them to the sauce. Cook for another 5 to 10 minutes. Serve the dish warm with your chosen side.
