Sautéed Mushrooms with Fresh Herbs
An excellent appetizer made from fresh mushrooms and selected herbs.

Ingredients

3 spoons Oil, olive

500 g Mushrooms, oyster

3 pods Garlic, fresh

1 spoon Rosemary, fresh

2 spoons Parsley, fresh

2 spoons Vinegar, balsamic

3 pinch Salt, table

1 pinch Spices, pepper, black

Thoroughly clean the mushrooms and wipe them with a damp cloth (if necessary, quickly rinse them under running water). Cut them into pieces of any size. Peel the garlic and finely chop it.

Place a pan on the stove and heat the oil. Add the mushrooms and sauté them over moderate heat for about 10 minutes. Add the garlic and spices, and sauté just until the garlic becomes fragrant. Remove the mushrooms from the pan and transfer them to a plate. Pour balsamic vinegar into the pan and let the sauce simmer slightly. Use a spatula to scrape the bottom of the pan well to remove all the caramelized bits left from sautéing the mushrooms.

Lightly season the mushrooms with salt and pepper, then pour the sauce over them and serve with fresh or toasted slices of bread.

Advice
Use various types of wild mushrooms, the best are small and firm mushrooms. Some mushrooms release a lot of liquid, especially if they were picked after rain. If this is the case, sauté them until the liquid evaporates.
