Savarin with Strawberries
Savarin is a well-known and old French dessert. It is also called Savarin aux fraises or French leavened wreath.

Ingredients

200 g Strawberries

150 ml Sweet cream

20 g Sugar, white

350 g Wheat flour, white, multi-purpose

20 g Yeast, dry

125 ml Milk, skimmed

Steps

Sift the flour into a large bowl and make a well in the center. Warm the milk to lukewarm in a cup. Crumble the yeast into it and dissolve it well along with a teaspoon of sugar. Pour the milk with yeast into the well and mix with a little flour. Cover the bowl and let the yeast rise for 30 minutes.

Meanwhile, beat the eggs with a hand mixer until frothy, along with the sugar, vanilla sugar, and salt. Melt the butter in a cup and slowly mix it into the egg mixture. Mix everything well and pour it into the bowl with the flour and yeast. Knead the dough well with a mixer until it becomes smooth leavened dough, shape it into a ball, and let it rise in a warm place for 30 minutes.

Grease a 26 cm diameter mold well with butter. Quickly knead the risen dough and place it in the mold, where it will rise for another 45 minutes. Preheat the oven to 190 °C. Place the mold with the dough in the preheated oven and bake on the middle rack for 40 minutes. Remove the baked dough from the oven and turn it out of the mold to cool.

Place a pot on the stove. Pour in the rum, white wine, water, and sugar. Cook the mixture over moderate heat, stirring occasionally, until all the sugar is dissolved. Then remove the pot from the heat and pour the mixture into a larger bowl that is big enough to hold the savarin. Let the mixture cool slightly.

Place the savarin in the liquid and let it soak up all the liquid. Then transfer it to a serving plate. Add sugar to the whipped cream and beat it until stiff. Spread the cream over the top of the savarin. Wash and clean the strawberries, slice them, and arrange them on the savarin. Serve the savarin immediately.
