250 g Wheat flour, white, multi-purpose

Steps

Sift the flour and mix it with baking powder. Add the diced butter, grated cheese, sour cream, and salt, then knead all the ingredients into a delicate dough. Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least one hour.

Roll out the dough on a lightly floured surface to about 6 mm thickness. Use cookie cutters to cut the dough into biscuits of various shapes. Place the cut biscuits on a baking sheet lined with parchment paper. Knead the remaining dough quickly, roll it out again, and cut more biscuits. Repeat until all the dough is used.

Preheat the oven to 200 degrees Celsius. In a bowl, whisk the egg yolks with a tablespoon of water using a fork. Brush the biscuits with this mixture. Before the egg yolk dries, sprinkle the biscuits with poppy seeds, sesame seeds, sunflower seeds, or pumpkin seeds. Bake the biscuits in the preheated oven for about 12 minutes.

Transfer the baked biscuits to a cooling rack and let them cool completely.

Serve the cooled biscuits on a plate or platter, accompanied by a glass of good white or red wine.
