-
500 g Flour, Wheat, bread flour
-
1 piece Egg, fresh
-
2 spoons Oil, vegetable oil, canola
-
1 spoon Vinegar, apple
-
350 ml Water
Steps
-
Mix flour, egg, salt, lukewarm water, and vinegar to make the stretched dough.
-
Prepare the filling: beat the eggs and mix them with cream, cottage cheese, breadcrumbs, and salt. Place a large pot of salted water on the stove. Wash the chives, shake them dry, and chop them.
-
Roll out the rested dough thinly on a damp cloth and then stretch it further. Trim the thicker edges, spread the filling over the dough, and sprinkle with chopped chives. Roll the dough into a strudel using the cloth. Soak a cheesecloth or cloth in water and wring it out, then spread it on the work surface and sprinkle with breadcrumbs. Wrap the strudel in the cloth and tie it with a string. Place it in boiling water and cook for 40 minutes. Remove the pot from the heat and let the strudel cool for 15 minutes.
-
Heat butter in a pan and toast the breadcrumbs in it. Take the strudel out of the water, unwrap it, slice it, place it on plates, and garnish with the toasted breadcrumbs.

Advice
The strudels from this recipe are savory, but you can also prepare sweet ones using the same recipe – add sugar and raisins, and omit the chives. Instead of homemade dough, you can use store-bought dough.
