Savory Muffins with Bacon and Asparagus

240 g Flour, Wheat, bread flour

Steps

Preheat the oven to 180 °C. Wash the asparagus and remove the woody parts. Cut them into small pieces. Also, cut the bacon into small pieces.

Fry the chopped bacon and asparagus in a heated pan for about 5 minutes over medium heat. Remove from heat and let it cool slightly.

In a bowl, mix the flour, baking powder, salt, and pepper. In another, larger bowl where we will prepare the batter, beat two eggs and whisk them until frothy. Add yogurt and oil and mix well.

Gradually add the dry ingredients to the egg mixture while mixing. Once you get a uniform batter, add the asparagus with bacon and three-quarters of the grated cheese. Mix well.

Place paper liners in the muffin tin and fill them with the prepared batter. Sprinkle a little grated cheese over each muffin. Bake the muffins for 25 minutes at 180 °C.

The muffins can be eaten while still warm, but they are also excellent cold. If you eat them the next day, store them in the refrigerator.
