Savory Muffins with Zucchini and Feta

100 g Flour, Wheat, bread flour

200 ml Milk, whole milk

150 g Cheese, feta

Wash the zucchini, dry it, and grate it. Place it in a bowl, lightly salt it, mix, and let it sit for 30 minutes to release as much water as possible.

Preheat the oven to 180 degrees Celsius. Grease the muffin tin with butter or oil. Instead of greasing, you can also place paper liners in the tin.

In one bowl, mix the dry ingredients: all-purpose flour, whole wheat flour, baking powder, pepper, salt, and garlic powder. In another bowl, whisk together the egg, milk, and oil with a hand whisk.

Add the wet ingredients to the dry ingredients and mix until you get a smooth batter without lumps. Squeeze the zucchini well with your hands to remove as much excess liquid as possible. Mix it together with the crumbled feta into the prepared batter.

Fill each muffin cup two-thirds full with the prepared batter. Bake the muffins in the preheated oven for 25 to 30 minutes.

When a toothpick inserted into a muffin comes out clean, remove the muffin tin from the oven. Serve the muffins warm or cold.
