Savory Profiteroles with Black Pepper

125 g Wheat flour, white, multi-purpose

Preheat the oven to 230 degrees Celsius. Line two low baking trays with parchment paper.

Place a pot with milk and butter on the stove. Slowly bring the contents to a boil over medium heat. Once it boils, remove the pot from the heat and add the sifted flour to the hot liquid. Mix well to form a smooth and lump-free mixture, then return the pot to the stove. While continuously stirring, cook for another 2 minutes or until a large ball of dough forms that easily separates from the sides of the pot and the stove. Remove the pot from the heat again and let the dough cool for about 5 minutes.

Using an electric mixer, gradually (one at a time) mix four eggs into the cooled dough. It is important to mix the ingredients very well each time an egg is added, so that the egg binds nicely with the dough. Once all the eggs are mixed in, add the grated cheese and ground pepper to the dough.

Fill a piping bag with the prepared dough and pipe medium-sized mounds onto the baking trays. Gently brush the top of each mound with a mixture of beaten egg and water. Bake the profiteroles in the preheated oven for 5 minutes, then reduce the temperature to 175 degrees Celsius and bake for another 20 to 25 minutes or until they turn a nice golden brown. Serve the profiteroles while still warm.
