Scallops with Mushrooms in Sherry Sauce

550 g Fish, cockle

340 g Mushrooms, mushrooms, fresh

Rinse the scallops and dry them with a paper towel. Season them with half a teaspoon of salt. Rinse the mushrooms, clean them, and cut them into quarters. Peel the onion, rinse it, and finely chop it. Peel the garlic and crush it with a knife, then finely chop or press it.

Melt 10 g of butter in a pan and sear the scallops in it. Cook them for 5 minutes on high heat; turn them once during cooking. Transfer the cooked scallops to a plate. Add the remaining butter to the pan. Reduce the heat and wait for the butter to melt. Use a spatula to scrape the bottom slightly to remove any remnants of the seared scallops.

Add the onion and garlic to the pan and sauté them over moderate heat for 5 minutes, stirring occasionally. Then add the sliced mushrooms and sauté them for 5 minutes. Stir several times during cooking. Transfer the mushrooms to a fresh plate and cover them to keep them warm.

Add thyme, marjoram, paprika, a pinch of salt, and pepper to the pan and stir. Pour in the sherry and stir again. Cook over moderate heat for a good minute, then add the broth and the sautéed mushrooms. Cook everything together for another 5 minutes, then remove the pan from the heat.

Arrange the scallops on plates and top them with the mushroom sauce. Serve the dish warm.
