Sea Bass in Salt with Young Potatoes
The recipe is by Žiga Šinkovec, who competed for the win in the second season of the show Gostilna išče šefa. He was eliminated in the third round. His favorite foods are fish and well-aged cuts of meat. As a professional chef, Žiga enjoys playing with flavors. He shared with us a recipe for a delicious fish dish, which he serves in his restaurant with a unique addition - basil espuma.

Clean the fish, rinse it, and place it on a salt base in a baking dish. Completely cover the fish with salt and bake at 190 degrees Celsius for 30 minutes.

While the fish is baking, wash the potatoes and boil them in salted water. Drain the cooked potatoes and just before serving, dry-roast them in a pan to give them a bit of a skin aroma.

Prepare the basil espuma in a thermomix. First, reduce the cream, then mix in grated Parmesan and pepper. Turn off the heat and add fresh basil leaves and pine nuts. Blend everything very finely. Once a smooth cream forms, add olive oil for flavor and texture. Cool the cream and pour it into a siphon.

Serve the dish by filleting the fish in front of the guest and placing it on a plate with the potatoes. Decorate with basil espuma and wish them a good appetite.
