Sea Pie with Saffron Mash

Ingredients

Steps

Peel the shallots, wash them, and finely chop them. Rinse the fish fillets under running water and dry them with paper towels. Use tweezers to remove any bones from the fillets. Clean and wash the shrimp tails. Clean and wash the spinach. Peel and finely chop the garlic. Peel the potatoes, wash them, and cut them into quarters. Keep them in a bowl of clean water until ready to use. Squeeze the juice from half a lemon.

Place a small pan on the stove and heat the oil. Quickly sauté the shallots in the hot oil (about 30 seconds), then deglaze with vinegar and cook over moderate heat until the liquid evaporates. Then add the white wine and stir the shallots. Cook until the liquid evaporates. Finally, add the cream, season the sauce with salt, slightly increase the heat, and stir for about 5 minutes until the sauce thickens. Then remove from heat and let the sauce cool.

Place a pot of salted water on the stove and bring it to a boil. Once the water is boiling, add the spinach and cook for about 4 minutes until wilted and softened. Drain the spinach and squeeze out all the liquid.

In a mortar, grind the garlic and saffron together to form a smooth paste. Place the garlic paste with milk in a small saucepan on the stove. Mix well and bring to a boil. Let it simmer for about 2 minutes, then remove from heat.

Place a pot of salted cold water on the stove and add the potatoes. Cook for 15 minutes until the potatoes are soft. Then drain the potatoes and mash them into a puree. Add the milk with the garlic paste. Also add olive oil and lemon juice, and mix everything well. Season the mash with salt to taste.

Preheat the oven to 200°C. Spread the spinach evenly on the bottom of a baking dish. Place the fish fillets and shrimp on top of the spinach, then pour the cream sauce over them. Sprinkle the crab meat evenly on top. Finally, spread the mashed potatoes over the top. Place the dish in the preheated oven and bake the pie for 30 minutes.

The pie is done when the top is lightly browned. Remove it from the oven and serve while still warm.
