Seared Roast Beef and Roasted Potatoes with Rosemary

500 g Meat, beef, shoulder

400 g Potatoes, white

pieces Rosemary, fresh

Peel the potatoes, wash them, and slice them. Season the slices with olive oil, salt, and rosemary, then roast them in an oven preheated to 210 degrees Celsius for 45 minutes.

Pat the roast beef dry with a paper towel. Sear it in a well-heated and minimally oiled pan. To achieve a medium-rare roast beef, cook it for 3 minutes on one side, then another 3 minutes on the other side. Season the meat with salt and pepper while cooking.

Transfer the cooked meat to a plate, cover it, and let it rest for about 5 minutes. Slice the rested meat crosswise into tagliata-style pieces and arrange them nicely on a plate or wooden board. Serve with the roasted potato wedges, lightly drizzle the meat with vinaigrette, and season everything with a touch of chili.
