Semolina Cake with Plums

Steps

Preheat the oven to 190 degrees Celsius. Grease the baking dish well with butter. Remove the pits from the plums. Place them in a bowl and cover with enough water to fully submerge them.

Place a pot on the stove with milk, sugar, and semolina. Bring to a gentle boil while stirring over moderate heat. Then reduce the temperature and cook on low heat until the semolina thickens and pulls away from the pot.

Mix the butter into the still hot mixture. Wait a few minutes for it to cool slightly, then mix in the egg yolks. Let the mixture cool.

Mix the ground almonds and cinnamon into the cooled mixture. In a bowl, beat the egg whites with a pinch of salt using an electric mixer until stiff peaks form. Gently fold the egg whites into the mixture in three parts using a hand whisk (you can also use a spoon or spatula).

Finally, add the drained plums, mix well, and pour into the prepared baking dish. Smooth the top and bake in the preheated oven for 40 to 50 minutes.

Advice
