200 g Semolina

50 g Butter, unsalted

In a medium-sized pot, bring milk to a boil, adding salt. Once the milk boils, slightly reduce the temperature and pour in the wheat semolina. Stir well with a whisk to prevent lumps. Continue cooking on low heat, stirring until the semolina thickens and pulls away from the pot.

Remove the pot from the heat and mix in the butter while the semolina is still hot. Let it cool to lukewarm, then mix in the eggs.

Shape the prepared mixture into balls of any size using your hands. Cook them in salted boiling water. The dumplings are done when they float to the surface.

Advice
Semolina can also be cooked in a mixture of water and milk. Butter can be replaced with margarine. You can also mix in any desired spices or grated Parmesan, which is added before the eggs. Serve semolina dumplings as a side dish. Enhance them with fried pancetta (bacon), fried breadcrumbs, or grated cheese.
