Semolina Pastry with Yogurt and Almonds
Semolina pastry with yogurt is delicious on its own, but you can also prepare it in a way typical of Morocco: pour hot syrup over it while still warm, which will ensure juiciness and freshness.

125 g Butter, unsalted

120 g Sugar, white

1 teaspoon Vanilla, extract, imitation

1 teaspoon Orange, shell

180 g Yogurt, plain, from whole milk

300 g Semolina

1 teaspoon Baking powder

80 g Nuts, almonds, blanched

Steps

Preheat the oven to 180 degrees Celsius. Grease a deep baking dish (20 x 20 cm or 20 x 30 cm) with butter. Line the bottom of the dish with baking paper. Carefully halve the almonds.

In a bowl, using an electric mixer, cream together the softened butter, sugar, and vanilla flavoring. While continuously mixing, gradually add the eggs one by one. Mix in the grated orange zest and yogurt into the egg-butter mixture.

In a separate bowl, mix the semolina, baking powder, and baking soda. Gradually add the dry ingredients in two or three batches to the yogurt, butter, and egg mixture.

Spread the prepared batter evenly in the prepared baking dish and smooth the top. Lightly score squares into the batter with a knife. Decorate each square with a rosette made from the halved almonds (see picture). Bake the pastry in the preheated oven for 30 to 35 minutes. Once the surface turns golden brown, remove it from the oven.

Let the baked pastry cool in the dish, then cut it into squares along the scored lines. Serve the squares on a large plate or platter.

Advice
While still warm, the pastry can be drizzled with hot syrup made from 300 ml of orange juice and 130 g of sugar. For a special flavor, mix a little orange blossom water into the prepared syrup. Instead of store-bought vanilla flavoring, you can use homemade vanilla extract.
