Semolina Pudding
A simple dessert made from everyday ingredients found in your pantry. You can enjoy semolina pudding with cherries, compote, or fruit sauce, and if desired, you can also add soaked raisins or fruit before baking.

Ingredients

500 ml Milk, whole milk

1 pinch Salt, table

100 g Butter, salted

100 g Semolina

4 pieces Egg, fresh

pieces Lemon zest, fresh

Steps

In a suitably sized pot, bring milk to a boil, then add salt and butter.

Reduce the heat and cook the semolina in the hot milk. Add the semolina slowly while stirring continuously to avoid lumps. Cook the semolina over low heat for about 10 minutes, stirring occasionally, until it thickens properly. Remove the cooked semolina from the heat and let it cool to lukewarm.

Mix egg yolks and grated lemon or orange zest into the cooled semolina.

Using an electric mixer, beat the egg whites until foamy, then gradually add sugar and beat until stiff, glossy peaks form.

First, mix a few tablespoons of the beaten egg whites into the semolina mixture to loosen it. Then gently and slowly fold in the remaining egg whites.

Grease a round baking dish (24 to 26 cm in diameter) with butter. Pour the prepared mixture into the dish, spread it evenly, and smooth the top.

Bake the pudding at 200 degrees Celsius for about 35 minutes, until the top turns golden brown.
