Semolina Pudding with Grape Sauce

Ingredients
Grape sauce

Steps

In a pot, bring the milk to a boil. Add sugar, vanilla sugar, and butter, and mix well. Then cook the wheat semolina in the milk. Remove the pot from the heat and let the semolina cool.

Mix the egg yolks into the cooled semolina. Beat the egg whites together with one tablespoon of sugar until stiff peaks form. First, gently fold one-third of the egg whites into the semolina mixture, then fold in the remaining egg whites.

Grease a round pudding mold well with butter and sprinkle with sugar. Fill the prepared mold with the semolina mixture. The mixture should reach three fingers below the rim (up to 3/4 of the mold) because the pudding will rise during cooking.

Cover the mold with aluminum foil and place it in a larger pot. Pour water into the pot until it reaches halfway up the mold. The pot in which we cook the pudding should be taller than the mold. Cover the pot and cook the pudding over moderate heat for 25 to 30 minutes. The water should simmer gently the entire time.

While the pudding is cooking, prepare the grape sauce. First, peel the grapes, cut them in half, and remove the seeds. In a pot, caramelize the sugar and add lemon juice and a little water. Wait for it to simmer slightly, then add the grapes and sweet cream. Wait for the sauce to come to a boil, then cook it until it thickens.

Once the semolina pudding is cooked, carefully invert it onto a serving plate. Cut it into pieces of desired size, serve on plates, pour the grape sauce over it, and serve.
