Semolina Pudding with Mango

Ingredients

12 dag Semolina

5 dl Milk, whole milk

1 pinch Salt, table

1.5 spoons Coconut, flakes
Steps

Place a pot on the stove and add milk, salt, sugar, butter, and vanilla sugar. Wait for the liquid to boil, then slowly stir in the wheat semolina and cook while stirring for another 5 minutes. Remove the pot from the heat.

Crack 5 eggs and separate the yolks from the whites into two bowls. Wait for the semolina mixture to cool, then gently mix it with the yolks. Beat the egg whites with a hand mixer until stiff peaks form, then slowly fold them into the yolk mixture.

Pour the prepared semolina mixture into a greased pudding mold. The mixture should reach three fingers below the rim because the pudding rises during cooking. Place a pot of water on the stove, which should be taller than the mold. The water should reach halfway up the mold. When the water boils, place the covered pudding mold in the pot. Cook in a water bath for 30 minutes.

Meanwhile, thoroughly wash the mangoes, peel them, and place them stem-side down on a clean board. Cut thick slices, keeping the knife as close to the pit as possible. Turn the mango and repeat the process on the other side. Cut off all the flesh clinging to the pit. Save a few pieces, and blend the rest in a food processor.

Cut the saved mango pieces into smaller slices and prepare dessert glasses. Layer half of the semolina pudding into the glasses, top with mango puree, and add another layer of pudding. Decorate the dessert with the remaining mango slices and sprinkle with coconut flakes.

Place the dessert in the refrigerator for at least 15 minutes and serve chilled to your guests.

Always choose impeccable mangoes without black spots, which indicate that the fruit is overripe and the flesh is stale. The mangos scent is the most telling; it should be strong. The fruit should yield slightly to gentle pressure. If we leave mangoes in a warm place, they will ripen at home. To speed up ripening, place them in a brown paper bag with a banana and a kiwi. If you dont have a pudding mold, you can pour the pudding mixture into regular pots, covering them with aluminum foil lids. Steam must not reach the pudding mixture. The mixture should always reach three fingers below the rim of the pot because the pudding rises during cooking.
