Sesame Rings

100 g Cheese, cottage cheese

100 g Butter, unsalted

100 g Flour, Wheat, bread flour

2 pinch Salt, table

1 pinch Spices, pepper, black

1 piece Egg, fresh

80 g Sesame seeds, roasted

Drain the cottage cheese well in a cheesecloth or strainer. Cut the butter into smaller pieces, add the cottage cheese, flour, salt, pepper, and quickly knead into a smooth dough. Shape the dough into a ball, wrap it in foil, and refrigerate for 30 minutes.

Meanwhile, preheat the oven to 200 degrees Celsius. On a floured work surface, roll out the dough to a thickness of about 0.5 cm. Use a larger cutter to cut out circles from the dough, and a smaller one to cut a hole in the center.

Crack the egg and carefully separate the yolk from the white into two bowls. Whisk the yolk together with a tablespoon of lukewarm water until well combined, and discard the white (or use it in another dish). First, brush the rings with the whisked yolk, then sprinkle with sesame seeds. Place them on a baking sheet lined with parchment paper.

Place the baking sheet in the preheated oven and bake the cookies for about 25 minutes. Arrange the baked sesame rings on a platter and serve to your guests.
