Shepherds Stew
According to the original recipe, this stew is cooked in a pot over an open fire – just as shepherds used to prepare it while grazing on the Balkan mountains.

80 g Butter, unsalted

250 g Meat, beef, side

250 g Meat, lamb, fillet

1 spoon Spices, paprika

350 g Tomato, red

350 g Bell pepper, red, fresh

125 ml Sour cream
Steps

Wash the meat, dry it, and cut it into bite-sized pieces. Melt butter in a pot or cauldron, add the meat, and fry it while constantly stirring until it browns.

Peel and chop the garlic and onion, then add them to the meat. Fry for another ten minutes while stirring continuously, then pour in 1/2 liter of water, season with salt, cumin, and ground paprika. Stir and simmer the meat in a covered pot for 60 minutes.

Wash, clean, and dice the bell pepper and tomato. Add them to the pot and simmer everything together in the covered pot for another 30 minutes.

Remove the pot from the heat and stir in sour cream. Serve with bread.

Bravina is the meat of female sheep and castrated males older than one year. The meat has a distinct aroma, so dishes with bravina are heavily seasoned to mask the strong smell. The strong aroma can also be mitigated by pouring boiling water over the meat before use. Instead of fresh tomatoes, you can also use canned tomatoes. Butter can be replaced with oil.
