Cook the noodles according to the instructions on the package, drain them well, and keep them warm. Wash the carrot, peel it, and cut it into thin sticks. Wash the chilies, remove the seeds, and cut them into small cubes (or strips). Peel the ginger, wash it, and finely chop it. Wash the shiitake mushrooms thoroughly and remove the stems. Slice the larger caps into strips, leaving the smaller ones whole. Wash the spring onions well, clean them, and cut them into strips of any length.

Heat oil in a pot. Add the carrot, chilies, and ginger to the oil and sauté over moderate heat for 5 minutes. Then add the mushrooms, pour in the broth, increase the heat, and bring to a boil. Once the soup boils, reduce the heat and cook for another 5 minutes. Add soy sauce, pepper, salt, and spring onions to the soup. Mix well and cook for another 5 minutes.
