Shrimp Skewers with Spicy Chili Sauce

Ingredients
Marinade

450 g Fish, shrimp

Sauce

3 spoons chili sauce

1 piece Lime, fresh

1 spoon Vinegar, apple

1 spoon Soy sauce, shoyu, less salt

Peel the shrimp tails if necessary (remove the main vein) and rinse under running water. Thoroughly dry them with paper towels. Wash the lime and dry it well. Finely grate the zest, then cut the fruit in half and squeeze the juice from both halves. Wash the chilies, clean them (remove the stems and seeds), and chop them into small pieces. Peel the garlic cloves and crush them with a knife.

In a large bowl, mix the lime zest, lime juice, crushed garlic, chopped chilies, and olive oil. Add the shrimp tails and mix everything well. Cover the bowl and let the shrimp marinate for at least 30 minutes.

While the shrimp are marinating, prepare the sauce. Wash the lime and dry it well. Finely grate the zest and cut the fruit in half. Squeeze the juice from both halves. In a small bowl, mix the sweet chili sauce, lime zest, lime juice, rice vinegar, and soy sauce.

Thread the marinated shrimp onto skewers. Place a pan on the stove and heat it well. Place the skewers in the hot pan and cook the shrimp for 1 to 2 minutes on each side. Lightly salt them while cooking.

Serve the cooked skewers on plates or arrange them on a large platter. Drizzle with a little sauce and serve. Offer the remaining sauce in a small bowl as a side.
