Steps
-
Cut the beef into bite-sized pieces. Clean and, if necessary, wash the vegetables. Chop the onion and garlic, slice the carrots into rounds, and cut the celery into smaller pieces.
-
Heat olive oil in a large pot and sear the beef pieces until nicely browned. Transfer the seared meat to a plate.
-
Add a bit more oil to the pot, then add the onion, garlic, and celery. Sauté over medium heat for 7 minutes. Add the garlic and tomato paste, and sauté for another 2 minutes.
-
Return the beef to the pot, add the tomatoes, water, wine, Worcestershire sauce, thyme, and bay leaf. Bring to a boil, then reduce the heat and simmer covered for 45 minutes.
-
Meanwhile, wash and cut the potatoes, peeling them if desired. After 45 minutes of cooking, add the potatoes to the pot and continue to simmer covered for another 20 minutes, until the potatoes are tender.
-
Finally, remove the bay leaf and thyme, add the peas to the pot, and cook for another 2 minutes (or longer if the peas are not yet tender). Season with salt and pepper to taste. Serve the stew garnished with chopped parsley.
