Simple Chocolate Mousse
To prepare a chocolate dessert that will completely enchant you, you only need four ingredients: chocolate, eggs, sugar, and salt. Forget about cream, butter, and other additives, as a true chocolate mousse doesnt actually need them. The important thing is to use fresh eggs and high-quality dark chocolate.

Ingredients

120 g chocolate, dark

1 pinch Salt, table

4 pieces Egg, fresh

5 teaspoon Sugar, white

Break or chop the chocolate into small pieces and place them in a heatproof bowl. Add a pinch of salt and place the bowl over a pot of hot water. Slowly melt the chocolate over the water bath (see tips). Once melted, remove the bowl from the heat and gently stir the chocolate. Let the melted chocolate cool to room temperature.

Separate the egg whites and yolks into two bowls. First, beat the egg whites with an electric mixer until stiff peaks form. Then add the sugar and continue beating until a glossy meringue forms.

Whisk the egg yolks until frothy and mix them with the melted chocolate. Then, gently and slowly fold the meringue into the mixture in two or three parts using a hand whisk.

Distribute the prepared mixture into glasses or bowls and refrigerate for four hours before serving.

Advice
A water bath is used for melting and dissolving delicate foods and ingredients or for frothy mixing (especially for preparing various sauces and creams). Place a heatproof bowl with the ingredients on top of another bowl with hot water and whisk the ingredients in the upper bowl until they thicken and froth. The water in the lower bowl should not boil vigorously!
