Simple Mint Syrup
If you enjoy elderflower syrup, you will also be delighted by mint syrup. The preparation is quick and very simple, and the homemade syrup will be a hit with children as well. Make a batch to stock up, as youll enjoy it even in the colder months. You can also use it as an addition to cocktails, lemonade, iced tea, and other refreshing drinks.

Ingredients

1 bouquet Mint

1 cup Water

1 cup Sugar, white

1 piece Lemon, fresh, without shell

Rinse the mint under running water and shake it well to dry. Using scissors or a sharp knife, chop it into approximately 0.5 cm pieces (do not discard the stems!). Wash the lemon and slice it into rounds.

In a pot, mix the water and sugar. Place it on the stove and heat slowly over moderate heat. Stir until the sugar is completely dissolved. Let the sugar syrup boil for 2 minutes, then remove the pot from the heat.

Place the chopped mint in a large bowl and pour the hot syrup over it. Stir well with a spoon, then arrange the lemon slices on top. Cover the bowl with plastic wrap and let the syrup cool completely (preferably overnight).

Once the syrup has cooled, strain it through a fine sieve. Press the mint well to extract as much flavor as possible. Pour the prepared syrup into a sterilized bottle and store it in a dark, dry place.

Advice
The syrup can be made from all types of mint. If desired, add a few sprigs of lemon balm. If you want the syrup to be more sour, mix in some citric acid. If you want to prepare a larger quantity of syrup, adjust the proportions accordingly (e.g., 1 liter of chopped mint, 1 liter of water, 1 liter of sugar). You can prepare a similar syrup from lemon verbena using the same method.
