Simple Pastry with Forest Fruits and Almonds
An excellent contrast of sweet sponge cake dough and tangy forest fruits. Of course, you can use any other frozen fruit instead. The pastry is very simple and quick to prepare, as the oven does most of the work.

Ingredients

4 pieces Egg, fresh

160 g Sugar, white

250 g Wheat flour, white, multi-purpose

1 bag Baking powder

1 bag Pudding, vanilla

100 ml Oil, vegetable oil, canola

100 ml Yogurt, plain, from whole milk

450 g Blueberry, raw

pieces Nuts, almonds, blanched

pieces Powdered sugar
Steps

Preheat the oven to 180 degrees Celsius. Grease any baking dish (round, rectangular) with butter.

Separate the egg whites and yolks into two bowls. Beat the egg whites into stiff peaks, and mix the yolks with sugar until frothy. Add yogurt and oil and mix well. Sift the flour, which has been mixed with baking powder and vanilla pudding, into the mixture. Mix until you get a smooth batter without lumps, then gently and slowly fold in the egg whites in two or three parts.

Pour the batter into the baking dish and sprinkle the forest fruits over it. Bake in the preheated oven for 40 minutes, then sprinkle almond flakes on top. Bake the pastry for another 20 minutes.

Let the baked pastry cool completely. Before serving, dust it with powdered sugar, cut into slices or pieces, and serve.
