Simple Plum Cake
A very easy-to-make dessert that will always impress you. Instead of plums, you can use other fruits (apricots, peaches, nectarines, raspberries, cranberries, etc.), and you can also experiment with other ingredients, such as replacing part of the flour with almond, coconut, cornmeal, or whole wheat flour.

120 g Butter, unsalted

1 teaspoon Vanilla, extract, imitation

120 g Flour, Wheat, bread flour

Preheat the oven to 175 degrees Celsius. Sift the flour, baking powder, and salt into a bowl. Mix the sifted ingredients well. Grease a round cake pan with butter and dust it with flour (remove any excess flour).

Clean, wash, and halve the plums. Remove the pits and place the halves in a bowl, where you mix them with lemon juice, ground cinnamon, and a tablespoon of sugar. Let them sit while you prepare the rest of the ingredients.

In a bowl, cream the softened butter and sugar. Mix in the vanilla extract, then gradually add the eggs one by one, and finally, on low speed, mix in the dry ingredients.

Pour the batter into the prepared pan and spread it evenly with a spatula or the back of a spoon, smoothing the top. Arrange the plum halves on top of the batter, cut side up. Sprinkle two tablespoons of sugar evenly over the plums and batter.

Bake the cake in the preheated oven for about 1 hour. It is done when a toothpick inserted into the cake comes out clean. Let the cake cool completely before serving. Serve with a glass of sweet white wine or a cup of your favorite warm beverage.
