Inspect the trout to ensure it is well cleaned, and rinse it under running water. Then dry it with a paper towel and rub it with salt on both the outside and inside. Peel the garlic and finely chop it, then wash the parsley and also chop it finely. Mix the parsley with the garlic in a small bowl and rub this mixture inside the belly of the fish. Pour a little high-quality olive oil into the belly as well.

Oil a ribbed pan and heat it well. Place the trout on the oil, then cook it over moderate heat for about 7 minutes or until the skin is evenly browned. Once the bottom side is seared, use a spatula to carefully flip the fish to the other side (the belly cavity should be facing upwards during flipping to prevent the contents from spilling onto the pan). Cook the trout on the other side until it browns (about 5 minutes).

Carefully place the cooked trout on a plate using a spatula. Take a lemon, wash it well, and dry it with a paper towel. Cut the lemon in half and place it cut-side down on the pan. Quickly sear the lemon, and once it browns, place it on the plate next to the trout. Serve the dish with a glass of good wine and a bowl of salad.
