Skewers with Olives and Marinated Sardines

Ingredients

500 g Fish, anchovies, fresh

2 piece Lemon, fresh, without shell

4 pinch Salt, table

2 spoons Spices, pepper, black

200 g Olives, green, in brine

Thoroughly rinse the cleaned sardines under running water. Remove the head and backbone, then open them up and cut them in half with a sharp knife to get two fillets from each sardine. Cut both lemons in half and squeeze out the juice.

Prepare a special bowl with a higher rim, in which you layer the fillets. Lightly salt each layer of fillets, pour over the lemon juice, and sprinkle with peppercorns. Repeat this process until all the ingredients are used. Cover the bowl and place it in the refrigerator for 4 hours.

After four hours, take the bowl with the marinated sardines out of the refrigerator. Open a jar of olives and drain them thoroughly. Prepare plastic skewers for appetizers. Wrap each olive with one marinated fillet and skewer two olives onto each plastic skewer.

Arrange the prepared skewers on a serving platter and offer them to your guests.
