Sliced Chicken Fillet with Vegetables and Cheese
The recipe is extremely simple, yet the result is impressive. Chicken fillets (boneless and skinless chicken breast halves) are shallowly sliced several times before baking, and then various vegetables are inserted into the slices. Everything is generously sprinkled with crumbled feta cheese and grated mozzarella, then baked in the oven. In the end, you get an excellent dish that can be enjoyed for lunch or dinner.

Preheat the oven to 180 degrees Celsius. Clean, wash, and dry the vegetables. Slice them into thin rounds or slices. Peel the garlic and finely chop it.

Take the chicken fillets and make several shallow cuts in each piece with a sharp knife. The cuts should be about 1.5 centimeters apart, and the fillets should still hold together at the bottom.

Grease a deep baking dish with oil, then place the sliced fillets in it. In a small bowl, mix olive oil, lemon juice, chopped garlic, oregano, salt, and pepper. Brush the chicken fillets with the prepared marinade (use a brush and also coat the slices with the mixture).

Place the sliced vegetables in a bowl and pour the remaining marinade over them. Gently toss to ensure the vegetables are evenly seasoned. Fill the slices in the fillets with the seasoned vegetables. You can also add a little crumbled feta between the vegetables. Spread the remaining vegetables around the fillets, then sprinkle the remaining crumbled feta and grated mozzarella on top.

Place the baking dish in the preheated oven for 20-25 minutes. If necessary, turn on the broiler function for the last 5-10 minutes to allow the cheese to turn golden brown.
