-
2 kg Meat, pork, smoked ham
-
1 piece Onion, raw
-
2 pod Garlic, fresh
-
1 bouquet Parsley, fresh
-
2 handfuls Bread, wheat
-
1 piece Egg, fresh
-
pieces Pear, dried croutons
-
1 spoon Oil, olive
-
pieces Salt, table
Steps
-
First, prepare the stuffing. Finely chop all the ingredients, tear the bread, add the egg, and mix. Sauté in a tablespoon of olive oil and season.
-
Make a hole (tunnel) along the length of the ham. Use a knife and spoon to help. Save the removed pieces for a sandwich. Stuff the ham with the prepared filling and bake in the oven, preheated to 180 - 200 degrees Celsius, for about two hours.
-
While the ham is baking, prepare the sides: egg horseradish and fried apples. Grate the eggs finely or coarsely (as desired). Add the remaining ingredients and mix well. If desired, blend the mixture smoothly with a stick blender to get a completely smooth mass.
-
Peel the apples and remove the cores. Cut them into finger-thick rings. Make the beer batter similarly to the batter for Kaiser pancakes (Schmarren). Separate the egg whites and yolks into two bowls. Beat the egg whites into stiff peaks, and mix the yolks with beer and flour. Once you have a smooth mixture, gently and slowly fold in the egg whites.
-
Coat the apple rings in sharp flour, dip them in the beer batter, and fry until golden brown in hot oil.
-
Serve the dish by placing a ring of fried apple on the plate and placing a spoonful of egg horseradish in the opening. Add two slices of ham and decorate the plate with fresh herbs (parsley, thyme, rosemary…).
