Snacks with Egg Filling
Bite-sized snacks with egg filling and crispy bacon are adorable little treats. We added an egg filling to the dough and garnished it all with crispy bacon slices. This is a quick solution for moments when youre unsure what to prepare for a larger number of guests. Heres the recipe for 35 delicious bites!

Ingredients
Dough

2.5 dl Water

80 g Butter, unsalted

2 pinch Salt, table

200 g Wheat flour, white, multi-purpose

5 pieces Egg, fresh

35 slice Meat, pork, smoked bacon

150 g Cheese, mozzarella

100 g Cucumbers, sour

200 g Mayonnaise

1 teaspoon Mustard

Steps

Cut the mozzarella and pickles into small cubes. Place the eggs in a medium-sized pot. Cover them with enough cold water to fully submerge them. Place the pot on the stove, wait for the water to boil, then remove the pot from the heat and let the eggs sit in the hot water for exactly 8 minutes. Remove the eggs from the water and cool them under cold running water.

In a larger bowl, add the mozzarella and pickle cubes. Peel the eggs. Separate the yolks from the whites. Cut the whites into cubes and crumble the yolks. Add the eggs to the bowl with the other ingredients. Add mustard and mayonnaise, season with salt and pepper to taste, and mix well. Store the prepared egg filling in the refrigerator until ready to use.

Prepare the choux pastry. Place a pot on the stove, add water, butter, and salt, and wait for it to boil. Add the sifted flour to the boiling water and stir vigorously with a wooden spoon until the dough separates from the pot and spoon. Remove the pot from the heat and let the dough cool slightly.

Preheat the oven to 200 degrees Celsius. Beat the eggs and mix them one by one into the cooled dough. Mix the dough well after each egg until it becomes smooth again. Prepare two baking trays and line them with parchment paper. Fill a piping bag or squeeze bottle with the dough and pipe approximately 35 small mounds onto the parchment paper.

Place the trays in the oven and bake the bites for 10 to 15 minutes. Let the bites cool completely, then use a sharp knife to cut off the tops. Use a fork to remove a bit of the dough to make space for the filling. Place a larger pan on the stove and melt a teaspoon of butter. Quickly fry the bacon slices on both sides in the pan. Fry the slices until they become crispy.

Fill the halves of the bites with the prepared egg filling, add a slice of crispy bacon, and cover with the other halves. Arrange the prepared snacks on a platter and serve to your guests.
