Snail-shaped Pastry with Salmon, Spinach, and Cheese

300 g Dough, puff

150 g Fish, salmon, smoked

1 spoon Oil, olive

1 piece Shallot

200 g Spinach, raw

pieces Salt, table

120 g Cheese, edamame

1 piece Egg, fresh

pieces Sesame seeds, roasted
Steps

Clean the spinach, wash it, and dry it. Peel the shallot and chop it into small pieces or finely mince it.

Heat oil in a pan and sauté the shallot until translucent. Add the spinach and cook, stirring occasionally, until it wilts and softens. Lightly season with salt and pepper. Remove from heat and let it cool to lukewarm.

Preheat the oven to 200 degrees Celsius. Line a low baking dish with parchment paper.

Squeeze out any excess liquid from the cooked spinach, then roughly chop it. Unroll the puff pastry and layer it with slices of smoked salmon. Sprinkle with grated cheese and the roughly chopped spinach. Roll it up along the longer side into a log, then slice it into approximately 1 cm thick pieces. Arrange the slices on the baking dish.

Beat an egg in a small bowl and brush it over the snail-shaped pastries (use a brush for this). Sprinkle sesame seeds on top. Place the baking dish in the preheated oven for 15 to 20 minutes. The pastries are done when they turn golden brown.

Let the baked pastries cool on the baking dish for 5 minutes, then transfer them to a plate or platter and serve.
