Snowball
A variation of the popular homemade dessert, prepared in a unique style. The base is a light and fluffy meringue, topped with a crispy caramel lace that hides a velvety vanilla sauce inside. This is undoubtedly a dessert that will make a big impression.

Vanilla Sauce: Heat the milk and cream in a saucepan. Whisk the egg yolks and sugar until frothy. Add the vanilla seeds and starch. Pour the warm milk over the frothy egg yolks, mix, and pour back into the saucepan. Cook over moderate heat, stirring constantly, until the sauce thickens nicely. Let the cooked sauce cool.

Meringue: Beat the egg whites until soft peaks form. Start beating at low speed, gradually increasing to medium. Continue mixing and gradually add the sugar (spoon by spoon) to the egg whites. Increase the speed to the highest level and stop beating once you get a thick, firm, and glossy meringue.

Caramel Lace: Line a baking tray with parchment paper. Sift the caramel powder onto it, about a millimeter thick. Use a round mold to shape the lace, then place the tray in the oven preheated to 200°C until the caramel powder melts and forms a caramel lace. Remove the tray from the oven and let the lace cool.

Assembling the Dessert: Lightly oil a round baking mold and place it on a parchment-lined baking tray. Pipe the meringue onto the bottom and sides of the mold, then add the cooled vanilla sauce into the meringue "nest." Cover the sauce with more meringue. Smooth the edges nicely. Bake the meringue in the oven preheated to 120°C for about 12 minutes. Let the baked meringue cool.

Transfer the snowball to a serving plate and carefully remove the round mold. Place the caramel lace on top. Serve the prepared dessert immediately.
