Snowballs with Vanilla Sauce
A popular dessert made from cooked meringues, served with vanilla sauce. The dessert gets its name from the snow-white meringues that resemble snowballs.

Ingredients
Egg white lumps

4 pieces Egg, egg white, fresh

4 spoon Sugar, white

1 l Milk, whole milk

1 pod Vanilla, extract, natural

Steps

Crack the eggs and separate the yolks and whites into two bowls. First, beat the egg whites halfway with an electric mixer, then gradually add 4 tablespoons of sugar while continuing to beat until you get a firm meringue.

Pour the milk into a wider pot and place it on the stove. Split the vanilla bean in half and scrape out the seeds with the tip of a knife. Add the seeds and the pod to the milk. Wait for the milk to boil, then remove the pod, reduce the heat, and let the milk simmer gently.

Scoop the meringue with a spoon and gently place the snowballs into the milk. Wait for 1 minute, then carefully flip the meringues and cook for another minute on the other side. Remove the cooked meringues with a slotted spoon and place them on a plate. Repeat the process until all the meringue is used.

Add sugar and starch to the bowl with the egg yolks. Mix the ingredients with an electric mixer until frothy. While continuously mixing, pour in 2 dl of hot milk. Then add the remaining milk, mix well, and pour the egg mixture back into the pot. Cook over low heat while continuously stirring for about 2 minutes or until the sauce thickens to the desired consistency.

Pour the hot cream into bowls and add the meringue snowballs. Let the dessert cool to room temperature, then transfer it to the refrigerator to chill further.

Drizzle the chilled dessert with a little caramel sauce, sprinkle with chopped hazelnuts, and serve.
