Snowmen with Meringue Glaze
Theres nothing better than offering cookies in cute shapes and colors for the holidays. If classic stars are getting a bit boring, try snowmen that look like the real thing.

In a bowl, mix the flour, ginger, cinnamon, salt, and baking soda. Cut the butter into pieces and place them in a larger bowl. Add brown sugar and mix both ingredients with an electric mixer until fluffy. Then add the egg, and while mixing, slowly add the molasses and flour. Shape the prepared dough into a loaf and refrigerate for at least 4 hours.

Then, on a floured work surface, roll out the dough to about 4 mm thick and cut out snowmen using a suitable cookie cutter.

Preheat the oven to 180 degrees Celsius. Prepare a baking tray lined with parchment paper. Arrange the snowmen on the tray and bake for about 10 minutes. Meanwhile, prepare the sugar glaze for the cookies. In a separate bowl, use an electric mixer to combine egg white, sugar, and lemon juice until you get a thick sugar mixture.

Once the cookies are baked, cool them on a wire rack and spread with the sugar glaze. Wait at least 15 minutes for the glaze to cool well, then decorate the snowmen as desired with the prepared sugar paste for decorating. Arrange the prepared cookies on a serving platter and serve.

Advice
Snowmen can also be decorated with melted chocolate. If the sugar glaze is too thick, thin it with lemon juice or add a bit more egg white.
