Soba Noodles with Shrimp and Avocado
Soba noodles are made from buckwheat flour and are delicious with various additions, whether its vegetables, a simple sauce, or seafood.

Ingredients

16 pieces Fish, shrimp

100 g Mushrooms, shiitake, fresh

1 bouquet Thyme, raw

1 piece Avocado, fresh

2 spoons Juice, lemon

350 g Pasta, soba noodles

1.5 spoons Oil, sesame

2 pinch Salt, table

2 spoons Soy sauce, shoyu
Steps

Rinse the shrimp tails under running water (remove the black vein) and pat them dry with a paper towel. Clean the mushrooms, rinse them quickly, and cut them into quarters. Wash the parsley, shake it dry, and finely chop it. Cut the avocado in half and remove the pit. Scoop out the flesh from the skin and cut it into smaller pieces. Drizzle the avocado pieces with lemon juice to prevent them from browning.

Place a large pot of salted water on the stove and bring it to a boil. Add the soba noodles to the boiling water. Cook them for 7 minutes on high heat. Then drain the noodles, rinse them under warm water, and cover them to keep them warm.

Place a wok on the stove and heat it well, then add sesame oil. Add the shrimp to the wok and stir-fry them over medium heat for 3 minutes until they turn a nice pink color. Season the shrimp with salt and transfer them to a plate. In the same wok, add the shiitake mushrooms and stir-fry them quickly (2 minutes). Add the soy sauce to the wok and cook the mushrooms for 1 minute, then add the shrimp back in and quickly mix everything together. Remove the wok from the heat, add the soba noodles, and mix everything well.

Divide the prepared noodles onto plates and top them with the avocado pieces. Sprinkle everything with chopped parsley and serve.
