Sofficini

Ingredients
Béchamel

Dough

Steps

First, prepare the dough. Pour milk into a pot and add salt and butter. Bring everything to a boil. Remove from heat and quickly add all the flour to the hot milk. Return to the stove and cook for a few minutes while continuously stirring until a dough ball forms. Let the dough cool.

Next, prepare the béchamel sauce. Place butter in a pot and melt it. Add flour to the butter and lightly toast it. While continuously stirring, slowly pour in the milk and cook the sauce over medium heat until it thickens like pudding. Season with salt and nutmeg. Let it cool.

Mix one egg yolk, diced cooked ham, and grated mozzarella into the cooled béchamel sauce. Stir everything until you get a uniform mixture.

Roll out the cooled dough to about 3 millimeters thick. You don't need to add flour because the dough is very pliable and doesn't stick. Use a round cutter to cut circles from the rolled-out dough. Add a spoonful of filling to each circle, then fold them over and seal the edges well with a fork or use a special mold. The process is the same as making jam pockets.

Coat the sofficini in egg and breadcrumbs, then fry them until golden brown in hot oil. Serve while still hot.
