Soft Baked Doughnuts
You can also prepare doughnuts without frying. They will be healthier but still delicious. You can shape them in two ways, choose the one you prefer.

2.5 dl Milk, whole milk

Steps

Heat the milk until lukewarm. Pour out 0.5 dl and mix it with yeast and a teaspoon of sugar. Let the yeast mixture stand for 10 minutes.

Add butter, sugar, and vanilla sugar to the remaining milk. Stir until everything is melted. If the butter is too cold, you may need to heat it a bit more. Mix in the rum and lemon zest.

Sift the flour into a larger bowl, make a well in the center, and pour in the milk, yeast mixture, lightly beaten egg, and egg yolks. Knead the dough, which will be quite wet, so knead by scooping it from the bottom of the bowl, pulling, and folding (similar to kneading bread dough with yeast). Cover and let it rest in a warm place for one hour.

Line a baking tray with parchment paper. Sprinkle the dough onto a floured surface, quickly knead it, then divide it into 60 to 70 g pieces, shaping them into balls. In this case, the doughnuts will be taller, and we will fill them with jam after baking.

Alternatively, roll out the dough to about 1 cm thick and cut out circles, approximately 8 cm in diameter. Place a teaspoon of jam on half of the circles, brush the edges with egg white or water, place another circle on top, press the edges well, and cut them out again with a cutter or glass.

Let the doughnuts rise for 30 minutes, meanwhile preheat the oven to 180 degrees Celsius.

Bake for 15 minutes until they turn golden-yellow. While still hot, brush them with melted butter, and when slightly cooled, dust them with powdered sugar.
