First, cut the butter into cubes and let it sit at room temperature to soften.

Meanwhile, crack two eggs into a bowl and beat them together with sugar until you get a pale yellow fluffy mixture.

Mix in the honey, cinnamon, vanilla paste (extract or sugar), and salt. Add the softened butter and mix well.

Separately, mix the flour and baking soda, then fold them into the wet ingredients with a spatula. You will get a very soft dough, which you divide into two parts. Wrap them in plastic wrap and refrigerate for at least two hours (or overnight).

Preheat the oven to 180 degrees Celsius, and line one or two baking sheets with parchment paper.

Shape the dough into balls, weighing about 25 grams each, and place them spaced apart on the baking sheet. Bake in the preheated oven for 12 minutes.

Once cooled, spread the cookies with lemon glaze. Prepare the glaze by mixing powdered sugar, lemon juice, and rum. If the glaze is too runny, add a bit more powdered sugar.
