Soft Leavened Crescents with Poppy Seeds and Jam
Delicious homemade leavened crescents are perfect for picnics, celebrations, and parties, and they also suit a lazy afternoon when all we feel like doing is lounging on the couch with a book in one hand and a cup of our favorite warm drink in the other.

Ingredients
Dough

500 g Flour, Wheat, bread flour

20 g Yeast, dry

250 ml Milk, whole milk

Filling

150 g Spices, poppy

3 spoons Sugar, white

300 ml Milk, whole milk

1 spoon Marmalade, orange

Steps

Crumble the yeast into a small bowl and mix it with sugar and 100 ml of lukewarm milk. Let it sit in a warm place for about 10 minutes to allow the yeast to rise.

Sift the flour into a bowl and mix it with lemon zest. Make a well in the center and pour in the risen yeast. Mix the remaining milk with melted butter, cooled to lukewarm, and egg yolks. Pour the mixture into the bowl and knead the ingredients into a smooth, soft, and pliable dough that doesn’t stick. If the dough is too sticky, add a bit more flour. Cover the kneaded dough with a clean cloth and let it rise in a warm place for 60 minutes.

While the dough is rising, prepare the filling. Mix ground poppy seeds with sugar and milk in a saucepan. Bring the mixture to a boil while stirring, then remove from heat and let it cool to lukewarm, stirring occasionally. Stir in the jam and season the mixture to taste with lemon zest, ground cinnamon, and vanilla sugar.

Divide the risen dough into 3 parts and roll each out into thin circles on a floured work surface. Cut the circles into triangles (you should get 8 triangles from each circle). Place a spoonful of filling on the wider end of each triangle. Roll the triangle from the wide end toward the tip, pulling the bottom slightly to ensure the crescents don’t open during baking.

Preheat the oven to 180°C (350°F). Line a baking tray with parchment paper and arrange the prepared crescents on it. Cover them with a clean cloth and let them rise for 15 minutes. Before baking, brush them with beaten egg and bake in the preheated oven for 20-25 minutes. They are done when they turn a beautiful golden brown.

Sprinkle the baked crescents with powdered sugar. Serve them while still warm or let them cool completely before serving.
