Ingredients

4 dl Milk, skimmed

20 g Butter, unsalted

130 g Wheat flour, white, multi-purpose

3 pieces Egg, egg yolk, fresh

pieces Oil, plant, sunflower
Steps

Pour the milk into a larger cup, bring it to a boil, and then remove it from the heat. Then mix in the butter and flour. Stir until a smooth dough without lumps forms. Once it cools, mix in the egg yolks.

Place a taller cup with oil on the stove and heat it well. Slowly pour the dough through a vegetable strainer into the hot oil and fry the droplets until golden. Remove them from the hot oil with a slotted spoon and drain on paper towels.

Serve them warm in soup or store them cold in an airtight container for later use.

Advice
Fry in a large amount of fat. The food should float in it. For frying, use fats that do not contain water, such as coconut oil or high-quality oil. The frying fat is hot enough when small bubbles form around a wooden spoon. The dough for the dumplings can also be dripped into the hot oil using a spoon.
