A soup full of healthy ingredients that is also quick to prepare. Its special color comes from turmeric, which, along with equally medicinal ginger, adds a hint of spiciness.

500 g Meat, chicken, breasts

500 ml Soup base, chicken, cube

2 dl Coconut milk

200 g Spinach, raw

Steps

Peel and chop the onion and garlic, slice the carrot into thin rounds, and cut the greens into thin slices.

Heat olive oil in a pot, then sauté the carrot, greens, and onion until the onion becomes translucent.

Add the garlic, ginger, and turmeric, sauté for a few more seconds, then add the chicken breasts. Pour in the broth or water, season with salt and pepper, and simmer on low heat for 20 minutes.

Remove the chicken breasts from the soup and shred or cut them into smaller pieces.

Return the meat to the pot, add coconut milk and spinach. Stir and after a minute of cooking, the soup is ready to serve.
