Soup from Honey Fungus (Armillaria)

Steps

Clean the honey fungus and boil them in slightly salted water for at least 5 minutes, then drain them. Discard the water in which the mushrooms were boiled.

While the mushrooms are cooking, prepare the other ingredients. Peel the garlic and onion and chop them finely. Peel the potatoes and clean the carrots. Cut the vegetables into cubes. Rinse the greens under water and chop them.

Heat oil in a pot and first sauté the onion. Add the garlic and when it becomes fragrant, mix in the chopped potatoes and carrots. Sauté everything together for 1-2 minutes while stirring.

Add the drained honey fungus, chopped greens, salt, pepper, and other spices of your choice to the sautéed ingredients. After a few minutes, add three glasses of water (you can add more or less depending on the desired thickness of the soup), which can be partially or fully replaced with broth. Let the soup simmer slowly for another 10 minutes.

Before serving the soup, sprinkle it with chopped parsley. If you like sour cream, you can add a spoonful of cream directly to the bowl of soup. Bread and a piece of aged hard or semi-hard cheese go well with it.
