Sour Beets with Cracklings

Ingredients

1 kg Turnip

100 g Meat, pork, fat

20 g Lard

1 piece Onion, raw

0.5 teaspoons Salt, table
Steps

Place a pot with a liter of salted water on the stove and wait for the water to boil. Taste the beets and if they seem too sour or too salty, rinse them briefly under running water in a colander. Add the beets to the boiling water and cook over moderate heat for 30 minutes.

Peel and chop the onion. Heat fat in a deep pan and sauté the onion. Stir and fry until the onion turns golden. Add the cracklings and continue frying until the cracklings become crispy. Set aside a few tablespoons of cracklings in a bowl.

Pour two ladles of beet water into the pan. Drain the cooked beets, add them to the pan, mix well, and cook covered for another 10 minutes.

Divide the prepared beets onto plates. Garnish with the reserved cracklings and serve.
