Steps

Preheat the oven to 180 degrees Celsius. Lightly grease a rectangular baking dish (23 x 33 cm) with butter. In a small bowl, prepare the cinnamon topping by mixing ground cinnamon with regular and brown sugar.

Beat softened butter and sugar on high speed for 2 minutes until you get a slightly creamy mixture. Add vanilla extract and eggs (add the eggs gradually, one at a time).

In a clean bowl, mix flour, baking powder, baking soda, and salt. Sift half of the mixture into the egg-butter mixture and slowly mix on low speed. Then mix in half of the sour cream. Repeat the process with the remaining dry ingredients and sour cream.

Add half of the batter to the greased baking dish and spread it evenly with a spatula, smoothing the top. Sprinkle half of the cinnamon topping over the batter. Add the remaining batter (it's best to add it in dollops using a spoon) and spread it as evenly as possible with a spatula, smoothing the top. Sprinkle the remaining cinnamon topping over the batter.

Bake the pastry in the preheated oven for 30 minutes. It is done when a toothpick inserted into the center comes out clean.

Serve the pastry warm or let it cool to room temperature. Cut it into pieces and serve with a cup of hot beverage.
