Spaghetti Milanese

Ingredients

400 g Pasta, spaghetti, spinach

100 g Meat, pork, smoked bacon

1 can Tomato, red

1 piece Onion, raw

1 piece Carrot, fresh

1 twig Green, raw

2 dl Alcohol, Wine, White

50 g Butter, unsalted

1 pinch Salt, table

100 g Cheese, Parmesan, grated

Peel the onion and carrot. Finely chop the onion and grate the carrot. Cut the bacon into thin pieces. Crush the tomatoes well with a fork, and wash the celery stalk. Place a pan on the stove and melt the butter. Quickly sauté the onion, carrot, and celery stalk, then add the bacon and fry while stirring until the bacon crisps.

Pour the white wine over the ingredients and wait for it to evaporate. Add the crushed tomatoes and season with salt to taste. Mix the ingredients well and cook over high heat for 5 minutes to thicken the sauce. Remove the celery stalk from the cooked sauce.

Meanwhile, place a large pot with about 4 liters of water on the stove. Wait for the water to boil, then salt it and add the spaghetti. Cook the spaghetti for exactly the time indicated on the package. Drain the cooked spaghetti well and toss it into the pan, mixing it thoroughly with the sauce. Serve the prepared spaghetti in bowls and sprinkle with grated Parmesan. Garnish with fresh basil leaves if desired.
