Spaghetti with Chard and Goat Cheese
A quick and easy summer pasta dish made with spaghetti, chard, and goat cheese.

450 g Pasta, spaghetti, whole grain

2 spoons Oil, olive

400 g Swiss chard, fresh

3 pods Garlic, fresh

200 g Cheese, goat, soft

1 handful Cheese, goat, hard
Steps

Clean the chard, wash it, and dry it. Cut it into approximately 2 cm pieces. Peel the garlic and finely chop it.

Place a pot with a large amount of water on the stove. Just before the water boils, add salt to increase the boiling power. Add the spaghetti to the boiling water and cook for the time indicated on the package.

While the spaghetti is cooking, heat olive oil in a pan. Add the chopped chard and sauté it, stirring until it wilts and softens. Then add the garlic and sauté it with the chard for 1 to 2 minutes (just until fragrant). Season with pepper and salt, then remove from heat. Before draining the spaghetti, reserve one cup of the cooking liquid.

Drain the spaghetti. Return the pan with the chard to the stove. Add crumbled goat cheese and a bit of the reserved cooking liquid. Once the cheese melts, mix the sauce well. Add the cooked pasta to the pan along with a bit more of the reserved liquid. Mix well and season with additional salt, pepper, and lemon juice if desired. Serve the prepared pasta on plates, sprinkle with grated goat cheese, and enjoy.

Advice
Instead of spaghetti, you can use other types of pasta (noodles, fusilli, penne, etc.). Toasted pine nuts are a great addition to this dish, sprinkled over the prepared spaghetti.
