Spaghetti with Clams
To prepare an exceptionally tasty and quickly made Italian (appetizer) dish, you will need only five ingredients: clams, pasta, white wine, garlic, and a bit of fresh parsley. The secret to success is also the juice that the clams release while cooking, which adds a distinctive sea flavor to the dish.

400 g Pasta, noodles, fresh

3 spoons Oil, olive

3 pods Garlic, fresh

1 kg Shellfish, abalone

1.5 dl Alcohol, Wine, White

Steps

First, sort the clams, clean them, and rinse them. Discard any damaged or open clams that do not close when touched. Thoroughly clean the remaining clams under running water (remove the so-called beard), scrub them, and soak them in cold water for 20 minutes to remove all the sand.

Place a pot with a large amount of water for cooking the pasta on the stove. Just before the water boils, add salt to increase the boiling power. Peel the garlic and finely chop it. Rinse the parsley under running water, shake it well, and roughly chop it. Add the spaghetti to the boiling water and cook until it is "al dente" (still firm to the bite).

Heat oil in a deep pan or pot and quickly sauté the garlic until fragrant. Add the drained clams and shake the pan well to distribute the clams evenly. Pour in the wine and cover the pan. Cook the clams over moderate heat until they open.

Once the spaghetti is cooked, drain it, reserving about 100 ml of the cooking water. Add the drained pasta to the pan with the clams, pour in a bit of the reserved liquid (just enough to make the dish juicy), and mix well so that the pasta absorbs most of the liquid in the pan. Add the parsley and pepper, give it a final good mix, and remove from heat.

Serve the prepared dish on plates and offer it with a glass of good white wine.
