Spaghetti with Cream, Mushrooms, and Spinach
Creamy pasta with sautéed mushrooms and young spinach. A flavorful and quickly prepared meal, suitable for all occasions and seasons. Since mushrooms are harder to digest, we recommend consuming this dish for lunch.

Ingredients

3 spoons Oil, olive

400 g Mushrooms, mushrooms, fresh

2 piece Shallot

1 pod Garlic, fresh

200 g Spinach, raw

200 ml Sweet cream

pieces Lemon, fresh, without shell

20 g Cheese, Parmesan, grated

400 g Pasta, Macaroni
Steps

Clean the mushrooms with a damp cloth and slice them. Smaller mushrooms can be left whole or halved. Wash and dry the spinach. Peel the garlic and shallot, then finely chop them.

Place a pot with a generous amount of salted water for cooking the pasta on the stove. While waiting for the water to boil, heat oil in a large pan and sauté the mushrooms until they turn a light brown color.

Once the water boils, add the pasta and cook it for 2 minutes less than the time indicated on the package.

Add the shallot to the pan with the sautéed mushrooms. Lightly salt the ingredients while stirring and cook for about 2 minutes, or until the shallot softens and becomes translucent. Then add the garlic and sauté everything together for another minute.

Just before draining the pasta, reserve about 2 dl of the cooking liquid in a cup. Drain the pasta and add it to the pan with the sautéed mushrooms along with the spinach. Pour in the cream and the reserved cooking liquid, then increase the heat to bring the sauce to a boil. Season with salt and pepper to taste and let the pasta cook in the sauce for about 2 more minutes. Shake the pan occasionally to ensure the sauce coats the pasta well.

Once the sauce thickens and the pasta is cooked, remove the pan from the heat and stir in the lemon juice, grated lemon zest, and grated Parmesan. Mix well until the Parmesan melts and makes the sauce creamier. Serve the prepared pasta on plates and sprinkle with a bit more grated Parmesan if desired.

Advice
Instead of button mushrooms, you can use oyster mushrooms or shiitake, and during the season, chanterelles or other edible wild mushrooms are also a great choice.
